A familiar taste & aromas of Chinese bbq skewers at the start - roasted peppercorn, basil, ground cumin, star anise, roasted sesame, coriander, garlic and ginger. Nice spice warmth, savoury without being overpowering. Umami comes out nearer to the end and brought out the meaty elements - think fatty lamb shoulder chops and lean chicken cubes. Yum!

really meaty hammy impressions, aromas of rosemary and basil. really leafy and green with dried herbs, though the umami profile of the rice seems to evoke breakfast hams. on the palate it's creamy, citrusy with more prominent mint, basil and oregano notes . real complex and fun too. would pair great with grilled meats

Kuromoji (spice bush) is a medicinal herb used in Japan. It's flavour is reminiscent of ginger, citrus, lemongrass, spices and wood, which is exactly what you'll find in this doburoku. Don't worry, it's not medicinal in flavour. In fact, you're greeted by comforting textures and flavours of koji, with the beautiful flavours of kuromoji just sliding into your DMs with a skill you'd expect from Japanese ryokan level hospitality.
